All the rich, chocolatey goodness of your favourite Starbucks Oat Fudge Bars, made totally vegan!
Recipes like this are dear to my heart. I love being able to take something completely non-vegan and converting it – Then feeding it to skeptics of veganism and proving to them that “vegan food” is no less delicious than anything else! I love love love it. It still blows my mind how many people are unaware that things like dairy free chocolate and vegan butter do actually exist!
This is one I owe to my momma, whose obsession with oat fudge bars motivated me to veganize the originals and end up with these little squares of goodness. Thankfully, the process was really quite easy! And they taste just as good, I might add. The oat layer is dense and chewy, and the chocolate layer is smooth and rich. Such a good combo.. mmm!
Original oat fudge bars call for sweetened condensed milk, which was the one thing that held me back from attempting this sooner. I thought about doing a homemade vegan condensed milk, but at the same time I wanted this recipe to also be a convenient go to as well. Lo and behold, I came across canned sweetened condensed COCONUT milk at the grocery store. My prayers to the vegan food gods were answered! As soon as I saw it, I knew what I was making that weekend!
I used the Organic Sweetened Condensed Coconut Milk by the brand Lets Do… Organic. I have no affiliation with the brand, but it will definitely be my go to in the future. It was perfect in this recipe! Along with some vegan butter and dairy free chocolate chips, these bars are super simple to make vegan.
These will definitely be a hit amongst Oat Fudge Bar lovers!
