This berry packed smoothie is perfect for those early mornings and afternoon pick me ups! Filled with blueberries, cherries, oats, it’s pure deliciousness in a glass!
If you read the post for my Vegan Pineapple Cupcake recipe, I mentioned that I was in Kelowna, BC recently for a mini vacay. And if you know anything about the Okanagan region, you know that the summer fruit is off the chain – I ate a couple pounds of cherries and a giant watermelon all to myself in the 4 days we were there. Yes, yes I did. And it was amazing. There’s something so satisfying about sitting down with a spoon and half a watermelon and just goin’ hard! I definitely had to bring some fruit home with me. So I grabbed some cherries (of courseeee), blueberries, and peaches before making my way back to Calgs.
With all these beautiful blueberries and cherries I picked up combined with the hot weather, something light, fruity, and COLD has been on my mind! This purple power smoothie was the perfect solution!
I usually don’t add oats to my smoothies but I am so glad I tried with this one. The oats add some nice filling power to the fruit. And that color! My, oh my. All them vitamins and minerals. All them antioxidants. ALL THE HEALTH. This is perfect for those mornings where sitting down to eat breakfast is simply not an option. I also love this as a post workout snack – throw a little vegan protein powder in there and you’re good to go! Cherries and blueberries are great for reducing muscle soreness after a workout due to their high concentrations of anthocyanins.
What’s better than an easy, healthy, delicious meal that takes minutes to prepare? This smoothie is all that and more!
- 1 - 1 1/2 cup dairy free milk, unsweetened
- 1 medium banana, frozen
- 3/4 cup frozen cherries, pitted
- 1/2 cup frozen blueberries
- 1/2 cup oats
- Few ice cubes
- 1 scoop vanilla protein powder, vegan
- 1 tbs maple syrup (or sweetener of choice)
- Fresh blueberries/cherries for topping
- Add all smoothie ingredients to blender
- Blend until smooth
- Add toppings if you'd like
