Apple chips make for a wonderfully simple, healthy and satisfying snack. The goodness of cinnamon and stevia make these homemade sugar-free chips a delicious and additive free alternative to store-bought chips!
I feel like apples are are one of those fruits that is like a good old pal that you can always rely on. They’re relatively inexpensive, always available, and really, what can’t you do with an apple? Eat them raw, bake them into pies and muffins, make them into applesauce.. not that you’d eat and/or bake a good old pal, but you get my point. So versatile. So yummy.
And of course, there are apple chips! With cinnamon of course! Cinnamon apple chips are the perfect combination of sweet and spicy and crunchy and delicious.
The good news is that these are soo simple to make. Slice, season and bake. That is all. That is all that stands in your way of fresh, homemade, healthy apple chips.
I remember the first time I tried to make apple chips. I sliced the apples with a knife. My mediocre knife skills paired with a laser like focus of trying not to slice my hand open, fingers off, etc., resulted in slices of all different shapes, thicknesses and sizes.
Lets just say, it was a bad time.
Enter: the mandoline. My, oh my. If you don’t have one, why?
I can’t believe I actually went 25 years of my life without this thing. Of course, when I first googled “mandolin” I was confused when I found myself upon search results referring to a fancy lookin’ mini guitar type instrument. Uh, what? Oh, mandolin-e, there’s an E, there’s an E. Duh.
Such a simple concept, yet so god damn useful. Like so many before me have said, if you don’t have one, go get one. Don’t ask questions. Just do it. Thank me later.
So, mandolin-e in hand, (or just a knife if you’ve got the skills), homemade apple chips are a breeze. No fancy dehydrator needed, just apples and an oven.
Though the chips are in the oven for a couple hours, it’s a perfect excuse to say, read a book, take a nice bath, vacuum the house, or you know, get lost down an enchanting trail of YouTube videos or Netflix episodes… Yeah I see you.

- 2 medium apples (I used one gala and one pink lady)
- 1 tbs stevia
- ¼ - ½ tsp cinnamon
- Preheat oven to 200 °F
- Using a mandoline slicer or a sharp knife, slice the apples into approximately 1/8” slices
- Remove any leftover seeds in the slices
- Place in a single layer on a parchment paper lined baking sheet
- Mix together the stevia and cinnamon and sprinkle over apple slices
- Bake for 2 hours, flipping halfway through
- Allow chips to sit on the pan for a few mins after removing from oven - they'll continue to crisp up
